Hello! My name is Nikolaos Kapsalis, and my life is inextricably linked to the enchanting Rouvas Forest here in Crete. I was born and raised at the foot of Mount Psiloritis, and ever since, this forest has been more than just a place for me – it's my root, my inspiration.
For many years, my family was involved in sheep farming, an occupation that gifted me with a deep knowledge and love for every corner of this land. This familiarity led me to a unique discovery: I was the first to locate wild truffles in Crete, a result of my close relationship with the Rouvas Forest.
Since then, guided by my trained truffle dogs, I passionately explore the secrets of the forest, uncovering these precious gastronomic treasures. At the same time, in the heart of this natural paradise, I created a biological bee garden. My bees, nourished by the rich flora of Rouvas, produce an exceptional organic honey, "Anegnoro," which carries the authentic taste of our land.
I would be delighted to introduce you to the fascinating world of wild truffles and organic beekeeping. I invite you to walk with me along the paths of Rouvas, to experience truffle hunting firsthand, and to learn about the production of our unique honey. My name is Anthi Moscha Κapsali, and I am a kindergarten teacher with a degree in Preschool Education and a master’s in Language and Literacy in Early Childhood. I have trained in Special Education and know Greek Sign Language. In parallel with my work in education, I am studying at a drama school as a facilitator of theatrical play, believing deeply in the power of art, play, and free expression.
I love traveling, nature, and fitness. I believe nature is a teacher, and when we observe it, we better understand both ourselves and children. Since I was young, walks with my father in the mountains, searching for wood and exploring nature, became a way of life.
I was introduced to the world of bees alongside him, something that fascinated me and which I still engage with today. Bees are essential for the balance of nature. Additionally, my father taught me the art of truffle hunting, and today, I share this unique experience with others.
My vision is to combine all that I love – nature, education, and art – to create authentic experiences that will be unforgettable.
"Hi, I'm Eleni, the second daughter in Nikos Kapsalis' large family. I'm lucky to have been born and raised in beautiful Gergeri, a village that's truly embraced by nature. Ever since I can remember myself, I loved exploring the surrounding landscape, observing the plants and animals – generally, being outdoors!
After school, I studied Mathematics at the University of Crete. It might seem a bit different from nature, but I really enjoyed the logic and organization of mathematics. At the same time, though, my heart always beat for art, which is why I also engage with music and painting. They are my own ways of expressing what I feel and see around me.
Ultimately, my love for nature was so strong that it drew me back to it. So, I decided to get more actively involved in two incredibly interesting things: searching for wild truffles and caring for bees. I really like the idea of looking for this 'treasure' of the earth in our forests and at the same time learning about the amazing world of bees and how important they are for the environment. It's like combining adventure with caring for nature – something that fills me with joy!"
Manto, our clever and always smiling truffle dog, along with Kala, her equally enthusiastic and lovable helper, are eagerly waiting to guide you through the enchanting paths of the Rouvas Forest. With their tails wagging excitedly and their boundless energy, they will invite you to become part of the thrilling adventure of truffle hunting!

The Wild Foods Truffle Hunting day is great for couples, families and people of all ages. It’s great for foodies and wine-lovers, or for anyone just wanting to immerse themselves in the landscape.
